Rey Silo<\/a> es una empresa que recupera la mejor tradici\u00f3n quesera asturiana, un queso que madura sin prisas en la\u00a0bodega de Pravia, a orillas del R\u00edo Nal\u00f3n,\u00a0y cuya elaboraci\u00f3n es totalmente artesanal.<\/p>\n

La leche fresca, reci\u00e9n orde\u00f1ada, llega desde Ovi\u00f1ana a Pravia y sin ning\u00fan tratamiento t\u00e9rmico, el maestro quesero procede a su cuajado en peque\u00f1as cubas, para posteriormente rellenar manualmente con ella los moldes que le dar\u00e1n la tradicional forma troncoc\u00f3nica del Rey Silo.<\/p>\n

Tras desuerar por su propio peso, el queso fresco es desmoldado y el maestro Ernesto Madera<\/strong> comienza el proceso de afinado del Rey Silo<\/strong> salando a mano una a una cada pieza.<\/p>\n

Despu\u00e9s de un primer secado en el que comienza a brotar el moho Geotricum Candidum<\/em> en la corteza, el queso baja a la bodega a reposar y, sin prisas, va madurando como antiguamente.<\/p>\n

La proximidad del r\u00edo Nal\u00f3n, en su desembocadura en el Cant\u00e1brico, proporciona a la bodega subterr\u00e1nea de Queser\u00eda Artesanal de Pravia<\/strong> unas condiciones de temperatura y humedad ideales para la maduraci\u00f3n y el afinado de nuestros quesos.<\/p>\n

El Rey Silo<\/strong> se afina, sin prisas, en la bodega subterr\u00e1nea de la Queser\u00eda Artesanal de Pravia<\/strong> durante varias semanas, dependiendo del grado de curaci\u00f3n que se desea.<\/p>\n

El resultado es un queso con sabor intenso, cremoso y seco, con preponderancia de sabores l\u00e1cteos y florales procedentes de las flores silvestres y la hierba de los pastos asturianos, con toques de avellana tostada y mantequilla,<\/p>\n","protected":false},"excerpt":{"rendered":"
