Bodegas Habla<\/a> lleg\u00f3 hace 15 a\u00f1os para revolucionar el mundo del vino y desde entonces no ha dejado de investigar y sorprender con nuevos registros en el sector. Una vez m\u00e1s, marca una nueva hoja de ruta creando un nuevo vino mediante fermentaci\u00f3n submarina.<\/p>\n

\u201cDesde hace cinco a\u00f1os venimos desarrollando en la bah\u00eda de San Juan de Luz un proyecto pionero a nivel mundial, en una nueva forma de hacer vinos mediante fermentaci\u00f3n submarina, ah\u00ed donde todo es diferente y donde un equipo de buzos controla el proceso en el que influyen la presi\u00f3n, la temperatura, la profundidad de las aguas en las que se sumerje y las corrientes marinas. Cuando comenzamos nuestras investigaciones en San Juan de Luz, y desde el principio decidimos que este proceso singular, que nos permit\u00eda crear un vino \u00fanico e irrepetible, fuera para HABLA<\/em>\u201d, dice Florent Dumeau, en\u00f3logo asesor de Bodegas Habla.<\/p>\n

Sin duda, el car\u00e1cter de Habla del Mar<\/strong>, que es m\u00e1s que un vino, porque da paso a una nueva categor\u00eda, para el que se ha fermentado la uva con una mezcla de diferentes cepas de levaduras, ( Hanseniaspora, Torulaspora y Saccharomyces cerevisae) ya que son las que mejor se adaptan a la fermentaci\u00f3n de los dep\u00f3sitos bajo el mar.<\/p>\n

Como no pod\u00eda ser de otra manera, ofrece una originalidad \u00fanica con notas de cata salinas, que nunca se habr\u00edan conseguido con otro proceso de elaboraci\u00f3n. \u201cSe trata de un concepto rompedor, que da lugar a una nueva categor\u00eda. Es una revoluci\u00f3n equivalente a la del coche el\u00e9ctrico en la industria del autom\u00f3vil<\/em> \u201c, ratifica Valentin Iglesias, director creativo de la marca.<\/p>\n
