Este \u00faltimo es el punto que hace original esta propuesta culinaria. Lo firma Yayo Daporta, que tiene una estrella Michelin desde noviembre de 2007 en el restaurante que lleva su nombre en Cambados (Pontevedra).<\/div>\n

\u201cSe trata de servir un men\u00fa a bordo de una goleta, con el comedor montado en cubierta\u201d, resume Daporta, un cocinero que cuenta con la distinci\u00f3n de la gu\u00eda gala desde noviembre de 2007. Por un precio de 95 euros por persona, el comensal puede disfrutar del alquiler del barco, un men\u00fa degustaci\u00f3n con bebidas incluidas y la navegaci\u00f3n a vela si el tiempo lo permite. En todo caso, el servicio incluye tripulaci\u00f3n en el velero. Aunque es posible \u2018comprar\u2019 plazas sueltas en esta goleta, la alternativa que m\u00e1s est\u00e1 funcionando en la pr\u00e1ctica es la reserva para grupos cerrados de entre 14 y 16 personas.<\/div>\n

La propuesta garantiza, por ahora, la presencia del chef a bordo. Daporta se centra en servir platos de su restaurante de Cambados, basado en un formato de cocina gallega de vanguardia. Entre sus creaciones destacan platos como el Carpaccio de vieiras con un suave ali\u00f1o de ajo y piment\u00f3n; el Canel\u00f3n de pulpo relleno de su arroz cremoso; el Caldo gallego con su cocido, los garbanzos, las carnes, los grelos y el chorizo; o el Huevo de corral, la patata en crema y crujiente y el chorizo en aceite.<\/div>\n

Perteneciente a una familia vinculada al negocio pesquero de la zona, Yayo Daporta consolid\u00f3 su vocaci\u00f3n como chef trabajando con Pepe Solla hasta que abri\u00f3 su restaurante en mayo de 2005, tras pasar por diferentes establecimientos como El Amparo en Madrid.<\/div>\n

Tras el \u00e9xito veraniego de su f\u00f3rmula culinaria en el mar (especialmente, en fin de semana), s\u00f3lo se permiten las reservas de lunes a viernes. Est\u00e1 previsto que el servicio funcione durante todo el mes de septiembre, siempre que lo permitan las condiciones meteorol\u00f3gicas. Por eso, cada reserva se confirma la v\u00edspera de la navegaci\u00f3n en funci\u00f3n de la previsi\u00f3n del tiempo y del estado del mar. Las reservas para el servicio de la goleta se pueden realizar telef\u00f3nicamente en el restaurante Yayo Daporta.<\/div>\n
