El caviar es considerado como el \u201coro negro de la gastronom\u00eda\u201d,<\/strong> un manjar refinado y codiciado por los mejores gourmets, que se elabora a partir de las huevas del esturi\u00f3n.<\/p>\n

En un entorno privilegiado de la Val d\u2019Aran,<\/strong> entre valles y monta\u00f1as de m\u00e1s de 2.000 metros de altura, nuestro socio Caviar Nacarii<\/a> produce este aut\u00e9ntico manjar,<\/strong> siguiendo el m\u00e9todo tradicional de los maestros iran\u00edes <\/strong>iniciado hace m\u00e1s de 200 a\u00f1os.<\/p>\n

\"Caviar<\/p>\n

Sus esturiones crecen de forma natural y sostenible<\/strong> en el agua pura del r\u00edo Garona<\/strong> procedente del deshielo, consiguiendo un exquisito caviar sin olores ni sabores ajenos.<\/p>\n

El esturi\u00f3n es uno de los animales m\u00e1s antiguos del planeta, cuenta con m\u00e1s de 250 a\u00f1os de antig\u00fcedad. Su h\u00e1bitat natural son los grandes lagos y sistemas fluviales del hemisferio norte, as\u00ed como otros pa\u00edses de Europa y Am\u00e9rica del Norte. Existen m\u00e1s de 26 especias de estur\u00edon y cada una de ellas produce un caviar distinto. El esturi\u00f3n de Caviar Nacarii se denomina Acipenser Baerii<\/strong> y es originado del lago Baikal en Siberia.<\/strong> Es el que mejor se adapta a la cr\u00eda en cautividad y su hueva es considerada como una de las mejores en pureza de sabor. El resultado es un caviar fresco de una excelente calidad, que cuenta con las certificaciones m\u00e1s exigentes de calidad: ISO9001 de Procesos, ISO14001 de Calidad Medio Ambiental y la ISO 22000 de Seguridad Alimentaria.<\/p>\n

\"Caviar<\/p>\n

Caviar Nacarii tambi\u00e9n comercializa carne de esturi\u00f3n,<\/strong> uno de los grandes desconocidos de la cocina contempor\u00e1nea. Se trata de una carne blanca de pescado, apreciada por los grandes chefs gracias a su versatilidad. Su carne jugosa y sabrosa contiene altas propiedades cardio-saludables y una baja aportaci\u00f3n energ\u00e9tica.<\/strong> Adem\u00e1s, de ser una gran fuente de Omega 3.<\/strong><\/p>\n

Para disfrutar al m\u00e1ximo de una degustaci\u00f3n de caviar, debemos tener en cuenta la fecha de elaboraci\u00f3n y envasado del caviar para determinar su punto de maduraci\u00f3n. A mayor maduraci\u00f3n, mayor intensidad de sabor.<\/strong> Debe mantenerse en fr\u00edo entre -3\u00baC y 3\u00baC, y consumirse entre 10\u00baC y 12\u00baC. Lo m\u00e1s aconsejable es degustar el caviar con acompa\u00f1amientos sencillos que despierten su aroma y evitar el plan tostado y la mantequilla, que disfrazan el sabor y la textura del caviar. Puede acompa\u00f1arse de vodka blanco, vino blanco seco, cava brut o champ\u00e1n.<\/p>\n
